 te Professor of Practice in Food Science and Technology at the University 
 of Nebraska-Lincoln\, specializing in food mycology (all the places where 
 food and fungi intersect). Her research includes edible and poisonous mush
 rooms\, the role of fungi in the human microbiome\, and mycotoxin-producin
 g fungi that infect wheat and corn. She is a resource for the Nebraska Poi
 son Center for mushroom poisonings.
